Carrot Cookie Recipe

Try these yummy snd healthy carrot cookies. This recipe tried and true and was submitted by one of Century team members. Enjoy!

Cookie Ingredients
  • 1 cup butter, softened (Not melted)
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 1/2 cup flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 cup finely shredded carrots
  • 1/2 cup raisins
  • 2 cup old-fashioned oats
  • 1/2 cup unsweetened shredded coconut (OPTIONAL)

Glaze

  • 1 c. powdered sugar
  • 1 oz. cream cheese, room temperature
  • 1 tbsp. milk
  • 1/4 tsp.  vanilla extract

Directions

Preheat oven to 350 and line a baking sheet with parchment paper or spray with non stick cooking spray. Beat butter and sugars until light and fluffy, add eggs one at a time until mixed well, then add vanilla.  In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt. Add dry ingredients to the butter mixture until well-combined. Stir in carrots, coconut, raisins, and oats and mix until just combined. Scoop approximately 1" rounds of dough onto the baking sheet. Bake until golden, 13 to 15 minutes.

The Glaze: Beat together cream cheese, powdered sugar, milk and vanilla until combined. Drizzle glaze over each cookie when slightly cooled and let harden before serving.
